Sunburst Juices was struggling with their 100% natural orange juice flavor turning bitter and losing its fresh aroma after pasteurization and during its shelf life.
Piffany’s beverage lab provided a custom-encapsulated natural orange flavor. This technology protected the delicate top-notes during heat treatment and released them upon consumption. We also incorporated a natural citrus extract to act as an antioxidant, preventing flavor degradation over time.
Client: Zen Ferments
Zen Ferments wanted to launch a new Ginger-Lemon kombucha, but their natural extracts were creating a harsh, overly acidic flavor profile when combined with the naturally tart fermented tea base.
We developed a water-soluble ginger-lemon flavor system that was specifically pH-balanced for fermented beverages. It included natural masking agents to round out the sharp acidic notes and a specialized ginger extract that provided warmth without excessive spiciness.

DairyFresh’s new line of drinking yogurts was suffering from syneresis (whey separation), creating an unappealing watery layer on top within a week of production.
